chateau d'ouchy, Lausanne
Nestled on the shores of Lake Leman with breath taking views of the Alps, the 12th Century four-star Chateau d’Ouchy is a landmark building in the Lausanne area and part of the acclaimed Sandoz group of hotels and restaurants. Initially, Stuart Forbes Associates (SFA) was commissioned by the owners to undertake a study of the hotel and make recommendations for improvements that would create a sense of unity across the variety of public spaces and, crucially, to improve the restaurant offering in order to increase the number of covers.
SFA was subsequently appointed to design a brand new restaurant, Grill 57, creating a notable new dining experience by maximizing the views across the adjacent lake whilst being sympathetic to the local vernacular. .
A brand new, open plan kitchen was installed and the restaurant was re-housed in a airy glass extension to the ground floor. This approach maximised natural light and harnessed the stunning surrounding views.
This prestigious project gave the SFA team the opportunity to utilise its recognised design expertise on all details of the project, from commissioning SFA-designed, hand-made French chairs for the restaurant seating to the lighting and interior furnishings of the lobby and bar areas.
